Shoichi Uchiyama has published a book, "Enjoyable Bug-Easting Recipes" with 80 recipes that describes how to create sushi using insects instead of fish.
According to Mr. Uchiyama, academic studies have shown that insects are rich in nutrition and many are even more nutritionally balanced than meat of fish. In addition, insects grow faster, require less feed than animals and fish, require less space, and usually eat what people discard as waste.
Even with all the great points made by Mr. Uchiyama, I still don't find myself compelled to go out and try any of his recipes. Have any of you tried eating bugs before? Leave a comment, I'd love to know what people think.
